We let our tomatoes ripen on the vine

These are Certified Organic Dry-Farmed Early Girl tomatoes the way Two Dog Farm grows them. Unlike "organic" which is very specifically defined now, "dry-farmed" can mean anything. Since our farm is close to the coast, we are cool enough, and have rich enough soil to actually never irrigate. We don't water them in after transplant, don't water during dry spells, we just don't ever water them. We don't even have water available in those fields. The plants and the fruits are smaller and the yield is less, but the flavor of the tomatoes is intensely concentrated.
We always grow Early Girls. We've tried other varieties and none taste as good. And though every tomato has their fans (our daughter loves Sungold cherry toms the best), there IS a difference.
We let them ripen on the vine. We pick them red or dark pink so that they get the richest, sweetest, most complex flavor. 
It takes a lot of faith, experience and hard work, but we believe that our tomatoes are worth it. They continue to amaze us all with their incredible taste.
The season is unfortunately short: August to late October or early November if we're lucky. So when the season is on - eat, can and dry as much as you can!
